Homemade and Blessed Banana Sugar Free Marshmallows


There is something about snow and hot cocoa. They just go together. I love cozying up with a good cup of cocoa with marshmallows and watching the snow fall. What I don't love is the amount of sugar and carbs in regular marshmallows. This recipe only has 5 grams of carbs and 2 grams of sugars for 4 marshmallows!

Even though it is the first full day of spring I'm choosing to make the best of it and used this flowery butterfly cup to make me feel more like its springtime in this storm.

These are the perfect hot cocoa marshmallows. They melt nicely leaving that foamy goodness that you love to scoop off the top of your cocoa. Plus, it gives a nice hint of banana flavor with the chocolatey cocoa! Don't get me wrong these are not the kind of marshmallows you can roast over a fire for a ooey gooey s'more, but they are amazing in cocoa and great by themselves. You and your kids will love them. They are fluffy sugar free fun!

  1. Add gelatin and cold water to a small bowl and set aside to soften.

  2. While the gelatin is softening, boil some water in a teapot.

  3. In a small saucepan or bowl add the gelatin, pack of banana, swerve, vanilla, and 3/4 of the boiled water. Whisk thoroughly to get out as much of the lumps as possible. Set aside. (Don't let sit and forget in between it will get too thick to pour in and make clumpy marshmallows. You want it to still be slightly warm and pourable.)


  5. In a stand mixer add 3 egg whites and whip until soft peaks.

  6. Stop the mixer. Pour the gelatin mixture into the mixer through a sieve to strain out any clumps.

  7. Whip the mixture on high speed until combined.Don't mix too long and dry it out.

  8. Spray a silicone mold with coconut oil pan spray. (If you don't have a mold you can skip this step )

  9. Spoon marshmallow into mold cavities and smooth with a knife or offset spatula. If you don't have a mold you can pour into a pan and smooth. When set you can then cut into desired shapes.

    If you use a mold let the marshmallows set about 10 minutes before unmolding.

  10. Add marshmallows to your favortie hot cocoa recipe or enjoy them on their own. Our favorite hot cocoa is simple and yummy. If you want to try it heat 1 cup organic heavy cream, then whisk in 2 Tbsp raw cacao and 1/2 Tbsp swerve and top with marshmallows!

    Refrigerate any unused marshmallows up to a week.
