Chocolate Avocado Coconut Truffles

 

 

Valentine's day is only a few days away! We all know that it's one of the holidays associated with sweets. But how can we still have candy and be healthy? We have a great recipe for you!

Not only is Valentine's next week but hopefully our products will be here too! We want to give you lots of fun ideas on how to use them and this is a perfect way to use our Avocado.

How heathy can a chocolate truffle be? Well, these have plenty of healthy fats (4 g each for those of you on Keto diets like we are) and lots of other goodness. Did you know besides being a heathy fat superfood that avocados have 20 different vitamins and minerals?! Just some of the nutrients in a single avocado (the equivalent of 2 of our packs) are:

  • Vitamin K: 26% of the RDA.
  • Folate: 20% of the RDA.
  • Vitamin C: 17% of the RDA.
  • Potassium: 14% of the RDA.
  • Vitamin B5: 14% of the RDA.
  • Vitamin B6: 13% of the RDA.
  • Vitamin E: 10% of the RDA.
  • Then it contains small amounts of Magnesium, Manganese, Copper, Iron, Zinc, Phosphorous, Vitamin A, B1 (Thiamine), B2 (Riboflavin) and B3 (Niacin).

Raw Cacao is another one of our favorite superfoods! Not only is it delicious but it can make you happy! It is a great source of serotonin, tryptophan, tyrosine and phenylethylamin which are proven to elevate your mood. That is not its only benefit... it also has high levels of magnesium which aids a healthy heart and helps turn glucose into energy. Plus, it has high levels of iron, antioxidants, and calcium.

What you will need:

  • 2 packets avocado baby and everyone else food
  • 1/4 c. plus 1 tsp water ( if you don't need a dairy free treat try subbing raw mlik or cream for an even creamier truffle)
  • 1 c raw cacao paste
  • 1/4 c. powdered xylitol (if you only have granulated you can use a food processor to powder it)
  • 1 tbsp coconut oil
  • 1 tbsp coconut butter
  • 1/2 cup desiccated unsweetened coconut for coating
  • 1 tsp pure vanilla
  • 1/2 tsp sea salt

How to:

 

  1. In a bowl, empty packets of avocado and add water. Let sit for a few minutes to reconstitute.

  2.  

  3. Meanwhile, add the cacao paste, coconut butter, coconut oil, and xylitol to the top of a double boiler. Melt on medium heat until smooth.


  4. Once melted remove from heat and mix in vanilla and salt.

  5. Stir in the reconstituted avocado.

  6. Chill in refrigerator for about 2 hours until solid enough to scoop and roll.

  8. Put coconut into small dish or bowl. Scoop truffle mixture with a tablespoon scooper if you have one if not a regular spoon works too. Roll into balls and roll through coconut to coat. You will only use about a tbsp of the coconut and can save the rest for another recipe.

  9. Eat right away or put back in the fridge to save for later. After chilling allow to come to room temperature before enjoying.
