Banana Buckwheat Pancakes

There is just something wonderful about a fluffy stack of pancakes. If you have tried our Sweet Potato Pancakes you know that our baby (and everyone food) is perfectly suited to making pancakes.

These beauties get their beautiful dark color from the buckwheat flour. Despite having wheat in its title buckwheat isn't a form of wheat or even grain. It is actually a seed and therefore it is gluten and grain free. What I find interesting is that it is actually related to rhubarb. There are lighter and darker versions of the flour available. I prefer the darker because it is more nutritious. Buckwheat is so awesome because it is delicious and good for you. It's high in protein and B vitamins and rich in phosphorus, potassium, iron, calcium, fiber and lysine.



What you will need:

  • 1 packet Banana baby and everyone else food
  • 1 Cup organic buckwheat flour
  • 1 Cup raw milk ( or any milk you like)
  • 3 tbsp water
  • 2 large free range eggs
  • 1 tbsp raw honey
  • 1/4 tsp pink Himalayan salt
  • 1/2 tsp aluminum free baking soda
  • 1 tbsp butter( plus extra for the griddle)

How to:

  1. Mix buckwheat flour, cinnamon, packet of banana, baking soda and salt together in a large bowl.

  2. Melt the butter in a small bowl (  used a Pyrex measuring up) Add in the eggs, milk, water and honey and mix well.

  3. Prep your griddle with butter and scoop 1/3 cup of batter on the griddle at a time for each pancake. Cook until you see bubbles then flip. Each side should cook about 2-3 min.
